Sweet potato brownies

I often take brownies as a snack when trekking in the nature – they provide energy, do not take up much space and are sinfully good. This recipe is vegan and sweetened only with dates and maple syrup. Flour can also be used gluten-free – millet or buckwheat. I use sweet potatoes a lot, not only because of their great taste, but mainly because of their high nutrient content. They are a source of beta-carotene which helps to prevent certain types of cancer, potassium, vitamin C and fiber.
