Shakshuka je typická snídaně na Středním východě, která v překladu znamená “směs.” Pravidlo zní: pokud ingredienci můžete přidat do omelety, můžete jí přidat do Shakshuky. V Izraeli jsem ochutnala několi typů Shakshuky včetně špenátové, tahle mi však zachutnala nejvíce a proto jsem si na ni v restauraci vyptala recept. Jídlo skládající se z rajčat, papriky, cibule, vajíček, sýru a koření jsem si oblíbila spíše jako oběd či večeři. Ale vlastně bych ji mohla jíst pořád. 

 

Vajíčka nám dodají protein, vitamín D a B12, rajčata vitamín A, C a vlákninu a sýr zase vápník. Ve zkratce, Shakshuka je výživově vyvážená, snadná, rychlá a moc dobrá!

Shakshuka is a typical Middle East breakfast that translates to “mixture.” The rule is: if you can add an ingredient to an omelette, you can add it to a Shakshuka. In Israel, I tasted several types of Shakshuka, including spinach one, but this one tasted the most to me, so I asked for a recipe in a restaurant. I prefer the food consisting of tomatoes, peppers, onions, eggs, cheese and spices more as lunch or dinner. But I could eat it all the time. 

Eggs provide us with protein, vitamin D and B12, tomatoes with vitamin A, C and fiber, and cheese with calcium. To cut it short, Shakshuka is nutritionally balanced, simple to make, fast and very good!

Ingredience na 2-3 porce

 

3 lžíce extra panenského olivového oleje

1 nakrájená cibule
1 pálivá červená paprika

1 nepálivá červená paprika

2 stroužky česneku
2 lžíce uzené papriky
2 lžíce mletého kmínu
750 g rajčat (pokud není sezona rajčat, používám celá rajčata v konzervě)
4 vejce
hrst černých oliv
hrst sýru feta (se sníženým obsahem soli) či ricotty
sůl
1-2 hrsti čerstvého koriandru (pokud nemám používám petrželku)
chléb dle chuti

Ingredients for 2-3 servings

3 tablespoons extra virgin olive oil
1 sliced onion
1 hot red pepper
1 mild red pepper
2 cloves of garlic
2 tablespoons of smoked peppers
2 tablespoons of ground cumin
750 g tomatoes (in summer I use fresh tomatoes, otherwise I use whole peeled tomatoes in a can)
4 eggs
a handful of black olives
a handful of feta cheese (with reduced salt content) or ricotta
salt
a handful of fresh coriander (or parsley)
bread

 

Postup

 
  1. Nakrájíme cibuli a papriky na proužky.
  2. Na velké pánvi orestujeme na olivovém oleji cibuli a papriky dokud není cibule sklovatá (já preferuji více do zlatova).
  3. Přidáme koření – uzenou papriku a kmín, promícháme a lehce orestujeme.
  4. Česnek nakrájíme na plátky a přidáme do směsi.
  5. Jakmile česnek začíná hnědnout, přidáme nakrájená rajčata. Česnek nesmíme restovat příliš dlouho, jinak zhořkne. Pokud používám rajčata čerstvá, nejdříve je spařím a oloupu. 
  6. Směs osolíme, přidáme koriandr a necháme cca 10 minut dusit.
  7. Lžící vytvoříme 4 otvory, do kterých vyklepneme vajíčka. Rajčatovou směs lehce nahrneme na okraje bílků, aby bílky byly hotové dříve a žloutek zůstal tekutý.
  8. Zakryjeme pokličkou, ztlumíme plamen na minimum a necháme vajíčka dojít do požadované konzistence. Že je žloutek tekutý zjistíme tak, že poklepeme prstem na střed žloutku.
  9. Jakmile jsou vajíčka hotové, sundáme pánev z plamene, posypeme sýrem feta, olivami a koriandrem.
  10. Podáváme s chlebem.

 

Instructions

  1. Cut onions and peppers into strips.
  2. In a large pan heat the olive oil and add the onions and peppers. Fry until the onion is glassy (I prefer more until golden).
  3. Add spices – smoked pepper and cumin, mix and fry lightly.
  4. Cut the garlic into slices and add it to the mixture.
  5. As soon as the garlic starts to turn brown, add the sliced tomatoes. Be careful if you fry the garlic for too long, it will become bitter. If I use fresh tomatoes, first I blanch them and peel them. 
  6. Add salt and coriander and let it simmer for about 10 minutes.
  7. Use a spoon to make 4 holes into which we put the eggs. Put the tomato mixture on the edges of the egg whites so that the egg whites are ready earlier and the yolk remains liquid.
  8. Cover with a lid, reduce the heat to a minimum and let the eggs reach the desired consistency. To find out that the yolk is still liquid, tap on the top of the yolk with your finger.
  9. Once the eggs are ready, remove the pan from the heat, sprinkle with feta cheese, olives and coriander.
  10. Serve with bread.
